2024 Pinot Gris wine

2024 Pinot Gris wineA deeply flavoured Pinot Gris with a long, textured finish. Tasting flavours of rose petal and quince in the Pinot Gris grapes as they ripened on the vine in the dappled Summer sunshine, I took a small parcel to explore how these flavours could be further enhanced by fermentation on skins: the technique in which red wines are fermented. The complex textural characters and added layers of flavour I seek are coaxed out by traditional techniques: a 'wild' ferment in aged barrels and a year of resting on light yeast lees with occasional stirring
